Filled with cream cheese, fresh fruit, and made into sandwiches of french toast, rather than 'stuffed'. Makes 4 sandwiches

1/4 - 1/2cupmilk
1/4tsp.cinnamon
1/8 - 1/4tsp.nutmegI use fresh, grated
1/2tsp.vanilla
one bananasliced
1/2 - 3/4cupcrushed pineapplefresh or canned
1/2cupcream cheese*
powdered sugar and maple syrupfor serving

Directions
In a large, shallow bowl, whisk together the eggs, milk, cinnamon, nutmeg and vanilla.
Dip one slice of bread into egg mixture, coating each side. Place bread in a fry pan heated over medium heat, and sprayed with cooking spray.
Cook on each side for about 1-2 minutes or until golden brown.
Remove from pan and transfer to a plate, and cover with a kitchen towel while finishing the batch.
To four slices of french toast, spread on the cream cheese, top with sliced bananas, then crushed pineapple. Top each with a second slice of french toast.
Serve with powdered sugar and maple syrup.
Notes
*Notes: You can add a tablespoon or so of sugar to the cream cheese, if you want it sweeter.
